In a large bowl, beat cream cheese and blue cheese until fluffy. Add eggs; beat on low speed just until combined. Place pan on a baking sheet. Place the cream cheese, blue cheese, spreadable cheese, sour cream, eggs, milk, sherry and pepper in a blender; cover and process until blended.

Steps to make Blue Cheese Cake:
  1. Cream cheese & blue cheese at room temperature and knead well with a spatula.
  2. Add cake flour and knead well.
  3. Add acacia honey and mix well. * This acacia honey, Mielizia from Italy is highly recommended!
  4. Make beaten eggs, add to the cake mixture, and then mix well.
  5. Add heavy cream and mix well.
  6. Add lemon juice.
  7. Add white rum and mix well.
  8. Pre-heat the oven to 180℃ (356℉)
  9. Pour the 1/3 cake mixture into the baking tray.
  10. Place raisins on it.
  11. Pour the left 2/3 cake mixture into the baking tray.
  12. Lightly drop the tray few times to make the surface even.
  13. Pour 1/3 water in the grill tray for steam baking.
  14. Place foil over the trays.
  15. Bake at 180℃ (356℉) for 25 mins, remove the foil, and then bake again another 25 mins.
  16. Cool it down. Do not touch the cake, it's easy to break.
  17. Initially so fluffy with air, but becomes tighter as it cools.
  18. Wrap with foil and put in the refrigerator to chill. Next day the taste become even richer!
  19. Put cream cheese & blue cheese in a container. Add acacia honey and mix lightly. Put in the refrigerator to chill.
  20. Slice a piece of cake and put on a plate.
  21. Put cream cheese & blue cheese mixture on it.
  22. Put some raisins & walnuts on it.
  23. Drizzle some acacia honey over the cake and serve!
