  1. Get 1 butternut squash; medium dice
  2. Make ready 1/2 C chicken stock
  3. Take 1/2 stick butter; small dice
  4. Prepare as needed olive oil

Using an immersion blender or working in batches in a blender, puree squash until smooth. Stir in honey, salt, and nutmeg. Transfer to a serving bowl, and garnish with roasted seeds. Scoop out the innards into a bowl and add butter, syrup, and salt.
