Then dip this chicken into the egg mixture, and then the breadcrumb mixture being sure to cover the whole piece of chicken. Place on a plate and repeat these steps until all of the pieces of chicken are covered.
  7. Heat up a pan with olive oil. Cook the chicken pieces on medium-high heat until the outsides are a dark golden brown and the insides are white (5 minutes each side). Every time you put a new piece of chicken in to cook, be sure to put more oil in the pan.
  8. Serve with extra parmesan on top and a side of vegetables!
