Cook mutton: In a pressure cooker, heat some oil and add the spices; cinnamon, cardamom, cloves, peppercorn, bay leaf, and star anise. Once the raw smell of ginger and garlic subsides, add sliced onions along with a pinch of salt, sauté until translucent.

Steps to make Mutton Stew:
  1. In a pan, add cooking oil, onion, whole red chili, whole cumin, whole garam masala,bay leaf and cook for 2-3 minutes until light brown.
  2. Now, add Ginger Paste & Garlic Paste and cook for 2 minutes.
  3. Now, add mutton,Salt, Cumin Powder, Turmeric Powder, Black Pepper Powder, Red chilli powder,black seeds, Coriander Powder, and cook for 10-12 minutes
  4. Now, add tomato puree, yoghurt,garam masala powder and half cup water mix them. After that, simmer for 30-35 minutes, then cook for 2-3 minutes
  5. Now, add green chili, and cook for 5 minutes.
  6. Then use ginger and green chilli for garnishing.
  7. Tasty Mutton Stew(istoo) now ready to serve hot with Naan and rice.
