This Lemon Curd made in the Electric Pressure Cooker is an easy way to make this amazing dessert topping. I'm new to the Instant Pot. I've been following you for a couple months. I made the lemon curd, & it's amazing!

Instructions to make Instant Pot Curd:
  1. Boil milk in instant pot for 21 minutes.(instant pot yoghurt button for boil)
  2. Cool that milk for 1 hour
  3. Now add 3 tsp of yoghurt to the milk. Mix it well with milk
  4. Keep this again in instant pot turning yoghurt mode on for 8 hours. In 8 hours, delicious yoghurt is ready

I substituted coconut sugar instead of white sugar. The lemon (I have a citrus juicer so it was fresh) was tart-forward, which I love! The coconut sugar also gives the curd an earthy undertone & a milk-chocolate color. My Instant Pot lemon curd is the exact same recipe as the stove top version, and the same recipe I have been using for years. The only change is the process, and I have to tell you I don't know if I will ever use the stove top for citrus curd again.
