  1. Keep the Instant Pot on saute mode and once hot,add some ghee or oil.
  2. Pop the mustard seeds and add bay leaf, curry leaves,green chilies and shallots.
  3. Add salt,turmeric powder,peanuts and saute well until shallots turn golden.
  4. Pour the lemon juice into this and saute well.
  5. Now add the washed and drained rice into the inner pot.
  6. Mix well all the ingredients until well combined.
  7. Add 2 cups water and check the salt. Now set the 'pressure cook' mode to 4 mins.
  8. Once done,open the lid using Quick Release and transfer the rice to a colander to cool.(to prevent sticking of rice)
  9. Serve hot  with pickle and salad of your choice.
