I made these with whole wheat and doubled the recipe with no issues. I added a tablespoon of homemade vanilla for an added little bit of flavor.. I did have one lingering problem with my buttermilk waffles: the crispy factor. Straight out of the waffle iron, the waffles had a golden, lightly crispy exterior that I loved, but this quickly faded as the waffles cooled.

  2. Add sugar to egg whites, whip until stiff.
  3. In large bowl, combine yolks, buttermilk, and remaining dry ingredients.

  6. Using 1/2 cup of mixture per waffle, bake in waffle iron until golden (3-5 minutes).
  7. Sprinkle powdered sugar on top if desired.
  8. Leftovers freeze and toast up wonderfully!

The solution is to toast the waffles in the oven for a few minutes - something I discovered while trying to keep a batch warm before serving. In a medium-sized mixing bowl, beat together the eggs, buttermilk, melted butter, and vanilla. In a separate bowl whisk together the dry ingredients. Combine the wet and dry ingredients, stirring just until nearly smooth; a few small lumps may remain. Spray your waffle iron with a non-stick cooking spray before preheating it.
