  4. Remove bay leaves and liquidise in batches. Reheat gently in a saucepan when you are ready to eat. I usually add a spoonful of yoghurt and chopped chives.

It does have more sodium using the onion soup mix than I would normally use on roasted vegetables so it wouldn't be something I use every time but it was a nice change from my normal recipe. Cut the onions through the base core to keep some of the layers in chunky pieces. Root vegetables have a sweet, earthy flavor that seems tailor-made for roasting.
